Invite your date for dinner.

Decide on the music for the evening. Everyone has their own musical taste, but generally speaking, it’s best to go with instrumentals. Make your own mix or have several CDs ready to go into the player. Skip the radio unless you can find a music-only station; nothing quashes romance like a loud salesman yelling about his large selection of pre-owned cars.

Next, choose your lighting: Spend a couple of bucks and buy new candles, but make them short. You want to see your date over the dinner table.

Then, plan your home-cooked meal. A nice, crisp salad with sweet-tart apples. Tender chicken topped with cranberries. And dessert? Use your imagination. Whatever you do, remember to play to all the senses and you’re sure to find your own recipe for romance.

The menu below sounds and looks impressive, but it’s surprisingly simple to make.

Green Apple and Blue Cheese Salad

2 tablespoons fresh lemon juice
2 teaspoons sugar
1-1/2 teaspoons extra virgin olive oil
2 teaspoons Dijon mustard
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
6 cups torn Bibb lettuce leaves (about 2 heads)
1 cup chopped Granny Smith apple, peeled and cored
2 tablespoons crumbled blue cheese
2 tablespoons chopped green onions
1 tablespoon chopped, toasted walnuts

Combine the first six ingredients (lemon juice through black pepper) in a large bowl, stirring with a whisk. Add lettuce and remaining ingredients, tossing generously to coat.

Pan-Grilled Chicken with Cranberry Salsa and Cilantro Cream

4 skinless, boneless chicken breasts
1/3 cup minced green onions
1 tablespoon pickled jalapeno peppers, minced
2 teaspoons balsamic vinegar
1 can whole cranberry sauce
2 tablespoons orange juice
3 tablespoons minced fresh cilantro, divided
2 tablespoons fresh lime juice, divided
2 oz. cream cheese, softened

Place each chicken breast between two sheets of plastic wrap and pound to a 1/2” thickness. Sprinkle each side of the chicken with salt and pepper. Heat a nonstick grill pan or skillet over medium-high heat. Cook chicken for about five minutes on each side or until browned and cooked. Keep warm.

To make the Cranberry Salsa, combine the onions, jalapenos, vinegar, cranberry sauce and orange juice in a medium bowl. Stir in 1 tablespoon of the lime juice.

To make the Cilantro Cream, combine 2 tablespoons cilantro, 1 tablespoon lime juice and the cream cheese in a small bowl; stir well to combine.

Spoon salsa evenly onto individual plates. Place chicken on top of salsa and top with cilantro cream.
